The grapes were grown by our friend Rachel Stahl in the eastern part of the Santa Ynez Valley. This fresh and delicious wine is 100% Sauvignon Blanc that was fermented in large (500 liters) new Hungarian oak barrels, then aged 10 months in neutral barrels. This fermentation regime yields a wine with balance between the texture from oak and the vibrant energy from the grapes. True Sauvignon Blanc flavors of citrus zest and gooseberries are obvious in this young wine that is escorted by restrained opulence. These flavors will evolve as this wine will age well for at least another 8-10 years.
"Green-tinged yellow. Dried citrus fruits, peach pit and musky herbs on the nose, with a floral quality and a touch of beeswax emerging with aeration. Dry and chewy, offering pungent lemon pith and orchard fruit flavors and notes of tarragon and quinine. Rich and chewy but quite lively. Finishes with a jolt of zesty minerality and lingering notes of flowers and honey." -- Josh Raynolds
